After spending a month travelling, beaching, drinking and eating her way through Indonesia, Brooke is back in the saddle at CYKL! And it’s no secret that Brooke is an awesome cook. She’s always cooking up something delicious and nutrition in the kitchen and she wanted me to pass on this awesome indo-inspired coconut curry veggie dish to you! Let’s get cooking!

Brooke’s Coconut Curry Veggie Dish

COCONUT RICE:


lightly oil (with coconut oil) the inside of a deep sauce pan

combine:
2 cups jasmine rice
2 cups coconut milk
1 3/4 cups water
2 Tbls. dry unsweetened coconut
1/2 tsp salt

Over med high heat stirring constantly so that rice won’t stick to the bottom of the pot or burn, once there is a slight bubbling… reduce heat to low, cover and cook for 15-20 mins. ┬áTurn off the heat and leave to stand on burner for 5-10 minutes (rice will stay warm like this for up to an hour while you prepare the veg and curry sauce).

VEGETABLES:

saute in 1 Tbls. coconut oil until softened:
1-2 carrots sliced
